  3. Bring the mixture to a boil for about 1 minute, stirring occasionally, then remove it from the heat.
  4. Whisk in the peanut butter and vanilla until everything is well combined and smooth.
  5. Pour the peanut butter mixture over the oats and stir until everything is nicely combined.
  6. Line a baking sheet with wax paper. Using a medium cookie scoop, drop spoonfuls of the mixture onto the wax paper.
  7. Let the cookies cool on the countertop for about 30 minutes. Once cool and dry, store them in the refrigerator to keep them fresh.
