- In a large bowl, stir together the quick-cook oats and salt. Set this mixture aside for later.
- In a small saucepan over medium-high heat, whisk together the stick of butter, sugar, and milk until well combined.
- Bring the mixture to a boil for about 1 minute, stirring occasionally, then remove it from the heat.
- Whisk in the peanut butter and vanilla until everything is well combined and smooth.
- Pour the peanut butter mixture over the oats and stir until everything is nicely combined.
- Line a baking sheet with wax paper. Using a medium cookie scoop, drop spoonfuls of the mixture onto the wax paper.
- Let the cookies cool on the countertop for about 30 minutes. Once cool and dry, store them in the refrigerator to keep them fresh.
